      這家大名鼎鼎的中華老字號起源于一位官宦后裔乾隆年間的“北漂”之旅。乾隆三年,山東人劉鳳翔身懷明庭醬肉絕技,攜孫子劉抵明來京,在西單牌樓拐角處,創立了“劉記醬肉鋪”。至嘉慶道光年間,天福號的醬肘子已名盛京城,成為達官顯貴所鐘愛的一道名吃,后曾有過“天香在味憶京華,最想天福醬肘花”的說法。天福號的美名傳至宮中,慈禧太后嘗過后也贊不絕口,特賜進宮腰牌一塊,下旨每日按量供應,從此天福號醬肘子成為清宮御宴必備的一道名吃,在京城享有“乾隆醬汁傳百年,慈禧腰牌通天下”的美譽。

      This famous Chinese time-honored brand originated from an official descendant’s moving to Beijing during the reign of Emperor Qianlong in Qing Dynasty. In the third year of Emperor Qianlong’s reign, Liu Fengxiang, a native of Shandong province, came to Beijing with his grandson Liu Diming and founded the “Liu’s sauced meat shop” at the corner of Xidan archway. During the reign of Emperors Jiaqing and Daoguang, the sauced pork shoulder cooked by Tianfuhao was already well known in the capital and became a snack loved by dignitaries. Later, there was a saying that “recalling all kinds of delicious food in the capital, what I miss most is sauced pork shoulder of Tianfuhao”. The good reputation was spread to the palace, and even Empress Dowager Cixi spoke high praise of it after tasting it. She specially gave Tianfuhao a waist token to enter the palace and ordered it to supply a certain amount of sauced pork every day. From then on, Tianfuhao sauced pork shoulder has never been absent from the imperial banquet in the Qing Dynasty. In Beijing, it is recognized as “the sauce making technique has been inherited for a hundred years since Qinlong’s reign, and the waist token awarded by Cixi enables Tianfuhao to go throughout the country”.

      歷經九代醬藝傳承的天福號醬肉制品美味可口,老少皆宜,不但深受達官顯貴、名人墨客的寵愛,也是百姓家庭年節餐桌上的必備佳肴。其醬肘子更以“肥而不膩、瘦而不柴、皮不回性、濃香醇厚”的特點享譽京城,肘子的制作經過剔骨、焯坯、倒鍋、碼鍋、醬制、撣汁等多道工序,過程煩瑣,僅醬制就需五六個小時,其間尤其講究人工對火候、時間的把握,只有15年以上從業者才能獨立操作。這項制作技藝也因“選料至精、工序繁瑣、工藝復雜、工具繁多”等特點被納入《國家級非物質文化遺產》保護名錄。

      The Tianfuhao sauce meat, which has been inherited for nine generations, is delicious and suitable for all ages. It not only is favored by dignitaries and celebrities, but also has become an essential delicacy on ordinary people’s dinner tables at festivals. The sauced pork shoulder cooked by Tianfuhao is famous in Beijing for the fact that its fat meat is not greasy; lean meat is not dry and hard; the pork skin is intact after cooking, and the taste is thick and mellow. The production processes are complicated, including deboning, blanching, switching pots, stacking, saucing while braising, saucing before serving and so on. The saucing while braising alone takes five or six hours, during which it requires so much attention to the heat and time that only practitioners with more than 15 years of experience can operate independently. This manufacturing technique has been included in the National Intangible Cultural Heritage protection list due to the characteristics of “precise material selection, complicated production procedures, and various tools”.
